Honey Crystallization — Why It's a Good Sign
One of the fastest ways honey is judged as fake is when it crystallizes. Learn why crystallization proves purity.
Crystallization is a natural process. Glucose in honey can form crystals while fructose stays liquid, creating a creamy or grainy texture.
Many pure honeys crystallize faster in cooler weather. Ultra-filtered or heavily heated honeys may stay liquid longer — which does not automatically mean they are better.
To re-liquefy crystallized honey, place the closed jar in warm water and stir gently. Do not microwave on high heat for long periods.
If honey never crystallizes and tastes flatly sweet like syrup, ask more questions about processing and authenticity.
